Learn the techniques applied to the preparation of fish
Learn to choose a fish, learn to scale it, remove its skin, remove fillets, cut it and prepare it. Learn the different cooking methods and cutting techniques. Be familiar with health and safety rules and organize your workbench.
Project management skills
Lead a project from A to Z, share, work in a group, organize your work, keep track of time, learn to anticipate and manage stress, learn to convey a message, know how to present your results, organize a tasting event.
Art of Cooking Program
Learning to cook with fish like a real chef in a cooking school is what Ekin Doğrusöz offers you to experience in 3 sessions each lasting 3h30. Share a joyful and precious moment with your budding masterchef : cook together and enjoy the delicious menu that you have created with the friendly assistance of the chef.
Whether it is vegetables or fish, before you can taste them, you must first prepare them properly. To do this, you have to know how to handle a knife correctly. This being said, it is necessary to use different cutting techniques depending on the dish you wish to serve. You will also learn all the techniques related to the preparation of fish, to recognize their freshness, raise fillets, prepare them in rolls, in steaks… You will also learn more about the different cooking methods and preparations.
Learning to make sushi
Learn how to make your own sushi, from preparing the rice to making the sushi roll.
Make a fish-based dish from a basket of mixed ingredients.

A few words by…
I am a chef
I have lived in France for more than 35 years. I have worked in starred restaurants in different regions of France, as a chef and sous-chef. After my return to Turkey, I worked as a chef in various restaurants, then as a consultant and trainer in institutions such as the Istanbul Culinary Institute. I also write for various magazines, including the “Dunya” magazine.
I created Oxalistanbul with the desire to shape a new history, combining my experience with the world of European gastronomy and that of my roots. Mixing interdisciplinary techniques with the gastronomic culture of the Turkish terroir, Oxalistanbul tells a singular story each time through its unique menus.
It’s possible to embark on a gastronomic journey off the beaten track and have a blast. See you soon to share this new experience together!

There is no prior knowledge needed, only the desire to learn!
Once your registration is validated, the location and appointment times will be sent by email and through whatsapp, as well as a link with the exact address. You can arrive 5 minutes before the session to get ready and arrive on time.
Do bring an apron and something to tie your hair with if you have long hair (elastic band, hairpin(s), etc). If you wish to take notes, take some pen and paper with you.
The recipes will be handed to you so as to allow you to make them in the comfort of your own home. A booklet will also be provided at the end of the program.
If you are unable to attend, please let us know as soon as possible by phone or email. Any missed session is lost and cannot be recovered, except in cases of force majeure (accident, hospitalization, health problem). If so, we will discuss with Morgan the possible catch-up of the lost session(s).
Except in cases of force majeure (accident, hospitalization), the costs already incurred are non-refundable (unreported absence, voluntary and intentional cancellation during the program).
