The aim of this project

To share with you my passion for pastry-making

Learn the basics of the pastry-making profession through the creation of pastry classics, and make recipes like a professional pastry chef. It’s by lending a hand and getting involved that you truly learn the most. Ferruh will guide you through the process of making your own recipes like a professional, with the necessary techniques and tips.

Technical skills
Learning about the basic ingredients, the best way to choose them, preparing and working with them, knowing how to use the equipment and learn what we call technical gestures, organizing the preparation of basic recipes step by step, assembling and decoration, converting measuring units, calculating quantities, learning hygiene and food safety rules. Learn how to make custards, icings, meringues and other elements related to pastry-making. Develop a creative approach to baking.

Project management skills
Lead a project from A to Z, share, work in a group, organize your work, meet deadlines, learn to convey a message, know how to present your results, organize a tasting event.

The program

Learning how to work like a real chef and making your own pastries is what Ferruh offers you to experience in 3 different sessions of 2h30.

Session 1 – My pastries
Homemade pastries: discover all the know-how of the early morning delights and fragrant afternoon snacks.
Brioche, marble cake, madeleines, waffles…

Session 2 – Chocolate and caramel
Divine, silky, luxurious: the art and way of expressing chocolate in all its glory.

Session 3 – My sweet cookies
Learn the delicious making of the cookies that have always made everyone happy 🙂 (sponge fingers, biscuits, diamonds, cat tongues, shortbreads…)

A few words by…

I am a pastry chef

I became a pastry chef since my conversion in 2015. It was on this date that I started taking classes at the Ferrandi gastronomic school in Paris. Needless to say I was far from imagining that it would become a passion and nowadays my full-time job.

I learned from the best, among which the chef Olivier HAUSTRAETE who collaborated with the greatest such as Alain Ducasse and Claire HEİTZLER (Ladurée) in France and Japan. I discovered a subtle and fragile human chain starting from the farmer himself to the chef in his or her kitchen, including the manufacturers and craftsmen in the food industry.
I am currently working as the pastry chef at the “Bistrot Français” in Istanbul. I am looking to develop my activity and organize events with other chefs. I constantly pursue my training in contact with other chefs so as to improve my technique and gain (even more) experience.

It turns out that what truly matters is not knowing everything but continuing to learn. You can accomplish new projects (even late in life) but the most important thing is to believe in yourself and dare to make that first step.
It is this desire that I hope to transmit to you as well!

How do I register?

Click on the project you are interested in and fill in the requested information. An email of confirmation will be sent to you.

Do I need to have prior knowledge in cooking?

There is no prior knowledge needed, only the desire to learn.

Where do we meet?

Once your registration is validated, the location and appointment times will be sent by email and through whatsapp, as well as a link with the exact address. 

You can arrive 5 minutes before the session to get ready and arrive on time.

What material do I need?

Bring your apron, enough to tie your hair if you have long hair, and a tuperware big enough to take away your sweet creations.
If you want to take notes, you can take some writing material

Will I have access to the content provided during the course?

Each session uses and refers to content that will be shared with you via Google Drive at the end of the course.

What happens if I cannot attend the course?

If you are unable to attend, please let us know as soon as possible by phone or email. Any missed session is lost and cannot be recovered, except in cases of force majeure (accident, hospitalization, health problem). If so, we will discuss with Ferruh the possible catch-up of the lost session(s).

Can I get a refund?

Except in cases of force majeure (accident, hospitalization), the costs already incurred are non-refundable (unreported absence, voluntary and intentional cancellation during the program).
